I tripped across a great pinterest recipe for pumpkin spice coffee creamer. I am a big fan of pumpkin spice lattes, but don’t always love the ingredients that are used on the coffee shops.
I adapted the recipe (since what the pinterest recipe yielded was extremely thick, and I used my own spices… so really I just used the idea and made my own!) Typical me. 🙂
Pumpkin spice coffee creamer
Ingredients:
- 1 can of coconut milk
- 1 cup of almond milk (or whatever other milk you use)
- 1/2 cup of canned pumpkin (not the pie filling, just pure pumpkin)
- Pumpkin pie spice (or just cinnamon, nutmeg and cloves) to taste
- Dash of salt
How to:
Just put all the ingredients in a blender. Store in the fridge in an airtight container (will be good for about a week).
I put the creamer in the bottom of my coffee mug, add a little bit of coconut oil, then toss it in the microwave to heat things up before I add coffee to it. It’s so creamy and delish! A great way to kick off a fall morning.
