Recipe: Marinated Kale (a great salad base!)

Hello my friends! I wanted to share my quick and easy recipe for a great easy salad base. Marinated kale! I make some of this in a few batches at a time. In the morning, when I make my salad, I just add whatever it is I want with my kale salad that day, and boom! Lunch is made.

How to make marinated kale

Step 1: Chop up kale. It could be curly kale or dinosaur kale (lacinato kale). I fill up a container that is about 1.5 – 2 cups worth for a lunch size salad.

Step 2: Add 2 tbsp of apple cider vinegar, or regular white vinegar (whichever you have or prefer. I prefer apple cider vinegar, and usually always have it on hand).

Step 3: Add 1 tbsp of olive oil

Step 4: Close container, shake it up and put it in the fridge.

The next day, I add a protein (chicken, salmon, marinated tofu) and other veggies I have on hand.

Marinating the kale makes it softer and easier to chew (not to mention way more delicious).

You can also get creative with your mix and add lemon juice, red pepper flakes, some maple syrup or some honey.

Makes for a delicious salad, and a great way to get some apple cider vinegar into your diet. It doesn’t get easier than that!
