I feel like it’s been a little while since I’ve posted a recipe!
This one has been a go-to for a few weeks now. It’s ridiculously easy to put together, and the result is delicious! My husband says that it tastes like a Snack Pack. Remember those puddings? It reminds me of the movie Billy Madison:
Anyways, here is the recipe!
All you do it throw all of these ingredients in a bowl, divide up into containers (this recipe makes 2 servings) put in the fridge overnight and voila! Your healthy snack pack.
- 2 tbsp collagen powder (unflavoured) – optional
- 1 cup of almond milk (vanilla or regular unsweetened)
- 1/4 cup of chia seeds
- 3 tbsp cocoa powder
- 1 tsp vanilla extract
- 2 tbsp of nut butter (either peanut butter or almond butter works great)
- 1 tbsp of maple syrup or honey
The trick is to mix it together well with a fork or whisk. It takes about the length of one song to mix it all together well enough not to get clumps of chia seeds. Don’t skimp on this part! The mixing is what makes this pudding turn out!
You can top it with berries or half a banana when you’re ready to eat it!
