Recipe: Cauliflower Protein Pancake

I was so surprised by the way this pancake turned out. It tastes like your average protein pancake but with a fraction of the carbs and sugar!

Why cauliflower? Well it’s pretty much tasteless (which makes it very versatile), it is low in carbs and sugar, it’s anti-inflammatory, is a great source of vitamin C, and has been rumored to boost brain health due to it’s vitamin B content (choline). So ask yourself, why not cauliflower?

With all this greatness – here ‘s a recipe to work this great veggie into your breakfast.

Cauliflower protein pancake


  • I scoop of protein (I used vanilla whey , if you don’t use vanilla protein, add a few drops of vanilla extract)
  • 1/2 cup steamed cauliflower (super mushy consistency)
  • 1/4 cup egg whites
  • 1/2 tsp cinnamon (and a bit of nutmeg if you like that!)

Place all of these ingredients in a blender. This creates your batter. Then cook on medium heat as you would a regular pancake. (Let the bubbles rise, then flip over).

Top with fruit, maple syrup, almond butter – whatever you would a normal pancake.

You can even make a few in advance for the week for a quick snack.
