Recipe: Sweet potato breakfast bowl

Here I am rocking the first 5 days of my whole 20 (post to come later about days 1 to 5 in detail). The only thing that was getting to me was the lack of variety at breakfast. I felt like all I was doing was eating greens and eggs. Which is fine, but variety is the spice of life right?

This morning I made my very first sweet potato bowl. Pinterest was my inspiration – then I whipped this up with what I had in my fridge. The result: delish and so different!

If you want a grain free, dairy free, soy free breakfast, this one is for you! I added in some collagen powder to get in my protein. You can use whatever protein you have or if you don’t feel like it, you can omit it completely.

You can even make this whole thing in advance and keep it in the fridge overnight if you need something ready to go right away!

Sweet potato breakfast bowl

Ingredients:

  • 1/2 sweet potato – mashed (I had about 3/4 of a cup, mashed)
  • 2 tbsp of collagen powder or your protein powder of choice
  • Dash of cinnamon
  • 1/2 banana
  • 1/2 cup of cherry/strawberry/pomegranite mix, thawed (or whatever frozen berries you have. I toss them in a cup and put them in the fridge overnight to thaw)
  • 1 tbsp hemp hearts
  • 1/2 tbsp coconut flakes

How to:

Mix the sweet potato with collagen and cinnamon. This is your base. Top with the banana, berry mix, hemp hearts and coconut flakes. You can have the sweet potato slightly warmed or cold. I had it slightly warmed up and it was great! I wouldn’t heat up the potato completely though. No one likes a warm banana.
