Last week, my sweet baby girl decided that mom can no longer feed her. That morning, I had to hand over a bowl full of oatmeal for her to eat herself. Which was fine, but resulted in a mid-morning bath that frankly, I can’t do everyday.
I was in a bit of a scramble, so I texted some friends for ideas. My friend gave me her basic pancake recipe – that I jazzed up a bit to get the fat and protein content up a bit. It was a huge hit! Baby girl is happy to feed herself – and mom is happy that it doesn’t make such a big mess. Win – win!
Baby breakfast pancakes
Makes 5 medallion sized pancakes
Ingredients:
- 2 eggs
- 1 banana
- 1/4 cup of baby cereal (I used Love Child Organics Oat and Chia)
- 2 tbsp of hemp hearts (to increase the fat and protein content of the pancakes)
How to:
Put all of this in a blender to make a batter. I actually put everything in a big mug and used my immersion blender. Talk about easy! Cook like a regular pancake but cook on low so it cooks through and doesn’t burn. Make sure to cook it through, to make sure the egg is completely cooked.
I served it with Oh She Glows chia seed jam and natural peanut butter. This breakfast will be a staple in our house!
