Hello! So my little gal has become quite the eater. And that has left me scrambling to find ideas of what to give her for snacks that don’t make a massive mess. Sometimes I’m not always near her high chair, so I want something that is portable, somewhat not messy, and above all tasty and healthy for my baby!
Here we have it – a muffin recipe for baby (well for those who are at the stage of eating little chunks of food). These muffins are so neutral tasting that I thought that my baby wouldn’t like it! But quite the contrary – she devoured two of them right away! I think these muffins would be a great vehicle for a nut or seed butter or a chia seed jam.
Avocado, banana and apple mini muffins for baby
Ingredients:
- 1 cup of flour (whatever you want to use – I used just your run of the mill plain flour)
- 1 cup of rolled oats
- 1 tsp baking powder
- 1/4 tsp baking soda
- 2 tbsp hemp hearts
- 1 banana, mashed
- 1/2 cup of avocado (I used the frozen avocado from PC, thawed of course)
- 1 shredded apple (any kind, I used gala)
- 1 egg
- 1/4 cup of cashew milk – or whatever milk you use
How to:
Preheat oven to 350. Mix all the dry ingredients together in a bowl (including the hemp hearts). In another bowl, mix banana, avocado and apple into a mush. Add the egg and the milk to the banana mixture. Add the dry ingredients to the wet. Fill a mini muffin tin (greased, or use parchment paper liners). Bake for 15-18 minutes. If you use liners, wait for the muffins to cool completely or else the liners will stick to the muffin. Will last in the fridge for 3 days or in the freezer for 1 month.
For some reason, I want to make sure that my baby gets enough fat in her diet. Fats are so good for so many systems of the body, and brain health – which is crucial for my baby right now as she is learning so much!
