Recipe: Summer lentil pasta salad (makes a great lunch!)

I had a fridge full of random veggies and odds and ends. With this nice weather we’ve been having lately, it made me crave a nice cool pasta salad. Not to mention I cooked some pasta for my kid’s dinner too – so just made some extra for me to add to this salad! Now that’s multitasking : )

Summer lentil pasta salad (serves 1)

Ingredients:

  • 1/2 cup of cooked red lentil pasta (I used the tolerant brand penne which has just over 10 grams of protein per half cup)
  • 1 small roma tomato, sliced
  • 1/4 of a yellow bell pepper, chopped
  • 3 small sun-dried tomatoes, chopped
  • 1/2 cup chopped spinach
  • 2-3 tbsp of good quality olive oil
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • splash of balsamic vinegar
  • Optional: feta cheese or goat cheese

Put all the ingredients in a bowl and mix! Enjoy!
